Edible Cookie Dough

I would say I’m a cookie monster, but that’s not entirely true. I’m a cookie DOUGH monster! I would always get in trouble as a kid for sneaking dough when we were making cookies, and to this day, it’s rare that I get a full pan of cookies into the oven because I’ve been taking little bites of dough throughout the process. You have to taste test, right? Quality control!

But seriously, cookie dough is my jam, and sometimes I just crave it. This is extremely problematic for a couple of reasons. 1) We can’t have tubs of dough sitting around because I have zero self control and would eat the entire thing until I made myself sick and 2) I can’t make a whole batch of cookies, just so I can get my dough fix and finally 3) my mom always told me eating raw eggs would make me sick. I’m 33 years old and still haven’t gotten sick from cookie dough yet, so I’m starting to wonder if that was just a tale to keep me from eating all the dough, but I guess I could see how this might be true. Anywho…one night I had a real hankering for some cookie dough and decided it was time to come up with my own edible cookie dough recipe sans egg! Over time, I’ve perfected it and it’s nice to have this little trick up my sleeve whenever the feeling hits. It’s tastes pretty much exactly like I remember the cookie dough from my childhood tasting, but it’s gluten free, dairy free, and obviously egg free, and the best part…NO refined sugar! Just straight up honey to give it it’s sweetness! This recipe is such a winner!

So this recipe is pretty straightforward. You don’t even need any equipment, just a bowl and spoon (I do recommend a silicone spoon, but a large regular spoon would work here, too!) How easy is that? For the chocolate chips, I prefer Lily’s that are made with stevia and are keto friendly, however, they do contain dairy. If you are allergic to dairy or are trying to eat strictly Paleo, I would recommend Hu gems and chopping them up since the gems are quite large. Enjoy Life brand, sold at most supermarket chains, are another really great chocolate chip option that are allergen free, however, these don’t classify as Paleo since they do contain cane sugar. The options are endless, so get whatever kind best floats your boat and makes your taste buds the most happy! Finally, I used refined coconut oil so this dough wouldn’t have a coconutty taste, but if you don’t have any refined coconut oil on hand, you can totally use virgin coconut oil, but just know it may affect the taste just a bit.

Now, whip up a bowl of this edible cookie dough, grab a spoon, and dig in! 

1 cup almond flour

2 tablespoons coconut flour

¼ cup refined coconut oil, melted

3 tablespoons honey 

¼ cup of chocolate chipsIn a medium bowl, combine almond flour, coconut flour, coconut oil, and honey. Stir with a spoon to combine. Continue stirring until everything is well incorporated. Once combined, fold in chocolate chips. Place bowl in the refrigerator for at least 10 minutes, but 30 minutes or longer is ideal to give time for the coconut oil to cool and harden up a bit. When you’re ready, take out the cookie dough, and enjoy
