Have an overload of summer berries stored up and you’re getting tired of only making smoothies with the leftovers? Yeah, me too! If you’re like me, you forget that berries taste INSANELY good on salads! Don’t be like me and relegate berries to only sweet dishes!
This is a salad I whipped up with the balsamic chicken I grilled the day before. The sweet flavor of the berries paired with the sweet and tangy balsamic chicken was nothing short of divine. Highly recommend. You can find the recipe for the grilled balsamic chicken HERE.
This recipe makes 1 large salad for 1 very hungry person, but as with all salads, you can adjust to make it your own! And of course, salads are awesome because they are low prep, simple, customizable, and of course packable! I know I’m always looking for lunches to take to work that leave me feeling full but still comfortable!
2 cups mixed greens
¼ cup strawberries, chopped
¼ cup blueberries
¼ cup walnuts
2 tablespoons nutritional yeast
1 breast of grilled balsamic chicken, chopped (Find that recipe HERE)
2 tablespoons of balsamic vinegar dressing (or your favorite kind of dressing)
Combine in a big bowl, mix, and enjoy! Does it get any easier than that?
