Grilled Balsamic Chicken

You know those days where you have no idea what you’re going to make for dinner and you just don’t have the energy to figure it out? We’ve all been there, and that’s why we all need a simple, easy, crowd-pleasing recipe to pull out when we’re scrambling. If there’s one recipe you need in your back pocket, I would say we all need an easy go-to chicken marinade. I mean, isn’t chicken just the usual fall back for when we don’t know what to do? It definitely is in our house! 

I always have a pack or two of frozen chicken breasts in my freezer ready for those days when I’m ill prepared or just feeling downright lazy. I throw together a simple, 5-ingredient marinade, let the chicken soak, and ta-da!! The dinner dilemma is solved! 

I went with a simple balsamic chicken because it’s such a crowd pleaser for both kids and adults. It’s tangy and tart and sweet, and just dang delicious! The marinade is made with 5 simple pantry staple ingredients! Add chicken and any sides you wish, and you have a complete meal. Seriously, such a life saver! We LOVE grilling the chicken because the smoky flavor along with the tanginess of the marinade is to die for, but you can just as easily bake or sauté the chicken to cook it. Whatever makes you happy (or whatever gets dinner on the table the fastest, because isn’t that what we’re all after?)

And bonus…this recipe checks all the healthy recipe boxes: Paleo, Keto, Whole 30, and low carb

1 lb chicken breasts (or thighs if you prefer dark meat)

½ cup balsamic vinegar

1 tablespoon grainy dijon mustard

2 teaspoons garlic powder

1 teaspoon sea salt

1 teaspoon pepper

Place vinegar, mustard, garlic powder, salt, and pepper in a bowl and whisk to combine. Transfer marinade to gallon sized Ziploc bag and place chicken in bag. Marinate for at least one hour, but the longer the better. I personally like to marinate mine overnight. Then grill on high heat, 7 minutes on each side. (Other cooking options: bake in oven at 425 for 15 minutes on baking sheet OR saute in skillet coated with olive oil over medium heat for 7 minutes on each side.) Let chicken rest for 10 minutes, then dig in, and enjoy!
