Confession: I’ve never been much of a coffee drinker before, but somehow back in high school I discovered the Mocha Frappuccino from Starbucks and it was my go-to. That is, until I found out how much sugar was in it, and not to mention all the questionable ingredients.
I’ve become a bit of a smoothie queen, and can take almost any drink and “healthify” it into a protein packed smoothie. For some reason, coffee sounded really good one morning for a little caffeine pick me up so I decided to recreate my beloved mocha Frappuccino, and it’s perfection. It’s exactly how I remember it, but with my version, I can actually feel good about eating it! It’s completely Paleo, keto-friendly, and sugar free!
1 cup vanilla almond milk (My favorite is the Malk brand, but feel free to use any almond milk you choose)
¼ cup cold brew coffee
1 Tbsp chia seeds
1 scoop chocolate protein powder (I used the coconut collagen protein powder from Primal Kitchen, and I think the hint of coconut in the protein powder added a little more flavor and gave it a taste closer to the original, but honestly, any chocolate protein powder will do)
A good handful of ice…at least 10 standard sized cubes.
Place all ingredients in blender and blend! Top with cacao nibs and enjoy!
