Paleo Buffalo Chicken Salad

Since it’s almost Summer, most people are trying to be more health conscious. I mean, swimsuit season is practically here and if you’re lucky, maybe a few trips to the beach are in your near future? Everyone wants to look and feel their best during the warmer months, and for people looking to lose a few pounds, it seems like they all turn to salads to replace a few meals. I love a good salad, especially for lunch. However, whether I’m eating for pure enjoyment or wanting to trim down for an upcoming event, I still want it to taste good and have tons of flavor. My go-to salad for when I want something light but still have tons of taste is a buffalo chicken salad.  It comes together in 5 minutes by using shredded chicken I always keep on hand in the refrigerator. Also, I use premade buffalo sauce and ranch dressing. I use Tessemae’s brand because of the simple ingredient list and this particular brand is always Paleo and Whole 30 approved. The following is not exactly a recipe, it’s more of a method, therefore, there are no measurements. Just use the below ingredients and make as much or as little as your needs demand.



Cooked shredded chicken breast (I always have this on hand in my fridge. I make a big batch in the instant pot every Sunday to have throughout the week)

Tessemae’s Mild Buffalo Sauce (This stuff definitely has a kick to it, which I love. However, if you can’t handle a ton of spice, you can either just use a small amount of the sauce or find something that’s less spicy if that suits you better.)

Tessemae’s Avocado Ranch Dressing (Tessemae’s Ranch dressing is really rich and delicious with all the flavors and nostalgia of conventional Ranch dressing, but as always, feel free to make your own! There are several Paleo Ranch dressing recipes out there, but I’m a fan of taking any short cut I can)

Bagged romaine lettuce

Diced purple onion (I always have diced onion in my freezer)

Bag of shredded carrots (Again, I love a shortcut, but you can shred your own carrots if you’d like-more power to you, friend!)

If you eat dairy: I like a little sprinkle of mozzarella or you can use blue cheese (which I think is disgusting, but hey, it’s YOUR salad)

Celery (Again, if you like it, add it. I don’t care for celery and never have any in the house, so I left it off mine.)


Pour the desired amount of buffalo sauce on the cooked chicken and stir until the chicken is coated. I like mine spicy, so I really douse the chicken with the sauce. Now, build your salad. Starting with the lettuce, throw all the produce in your salad bowl. I have almost completely cut out gluten, but I still allow myself a little bit of dairy. I think of dairy as a condiment, so I threw a little sprinkle of mozzarella on top. Finally, top it off with your Ranch dressing and enjoy!
