Easy Eats: Acai Bowl

I remember about 10 years ago, when nobody had heard of acai. It couldn’t be found anywhere except Whole Foods, no one knew how to pronounce it…well okay, still no one knows how to pronounce it. Some things never change, but acai has become a little more main stream and can be found in the freezer section of just about any grocery market. Its popularity has grown for good reason. Acai berries are considered a super food: low in sugar, high in antioxidants, among many other amazing benefits. Plus, it tastes rich and decadent, kind of like a mix between chocolate and wine. Sounds weird, but trust me, it’s so good.

My favorite way to eat Acai is to make it into a smoothie bowl. This is one of my go-to breakfasts, especially in the summer. It’s the perfect balance of rich and creamy but totally refreshing and won’t weigh you down. And of course, it’s so easy and comes together in no time at all.

Here’s all you’ll need:

½-¾ c. unsweetened almond milk

1 frozen packet of unsweetened acai berries

½ frozen banana

small handful of frozen strawberries

1 tbsp peanut butter (or any nut butter you choose…PB is a no-go with Paleo, but peanut butter is the love of my life, so I’m keeping it for now)

1tbsp collagen

1tbsp chia seeds

1 scoop chocolate protein powder

Optional: ¼ frozen avocado (really makes the bowl super creamy); handful of ice (just for extra thickness and bulk)

Throw all of the ingredients into the blender and blend until smooth. Pour it into your bowl! Once it’s done, top with anything you like. I love to put granola and a drizzle of honey to top mine off. Sadly, I was out of granola, so I topped it with some sugar free cereal that was in my KetoKrate box for the month.  I’ve also topped it with hemp hearts, extra chia seeds, or even another drizzle of nut butter on top. Whatever you want. Get creative. Hope you enjoy this quick and easy breakfast!
